Costa Ballena Ocean sits on the Atlantic coast near Rota, a José María Olazábal design built in 1995 and opened for play in 1997. It's since become an official venue for the European Tour's Qualifying School, hosting national training squads and international team events, a level of pedigree few resort courses on this coast can match. The 27 championship holes are arranged as three separate nines, combined in pairs to make up your round, so the exact routing can vary depending on rotation. It's a flat, walkable layout studded with palm trees, with some holes running directly along the coast and well-placed bunkers and lakes throughout, built to test everyone from beginners to scratch golfers. A separate 9-hole par-3 course adds a relaxed option for working on the short game. The practice facilities are the real standout: a 300-by-350-metre driving range with room for 120 players at once, rated among the best in Europe by the Swedish PGA. With a gym, sauna and Jacuzzi included after your round, this is a course built for a proper day of golf. Montecastillo sits in the sherry-producing hills outside Jerez de la Frontera, a Jack Nicklaus design whose 1994 inauguration saw Nicklaus himself take to the course alongside his sons. It went on to host the European Tour's Volvo Masters for five consecutive years from 1997, taking over hosting duties from Valderrama, before further stints with the Peugeot Tour of Spain and the 2009 Barceló PGA Tour of Spain. Few courses on the Costa de la Luz can match that pedigree. The layout is vintage Nicklaus: bold bunkering, large fast greens, and water guarding several key approaches, including the closing par-4 17th and 18th. Elevated tees and a dramatic downhill closing hole make the most of the rolling terrain, with several genuinely memorable views back over the resort and the surrounding hills. It's a proper test, best suited to golfers who enjoy length and a bit of theatre in their round, and buggies are worth having for the longer green-to-tee walks. Montecastillo is a private club, with advance booking required for visitors. Sherry Jerez Golf Sanlucar de Barrameda, Andalusia

Sherry Golf Jerez sits just outside the city, overlooking the sherry-producing vineyards the region is famous for, and was designed by Blake Stirling and Marco Martin of Global Golf Company in 2004. It's a modern, American-style layout with wide fairways and generous greens, built to be genuinely enjoyable for amateurs while still testing better players. The front nine climbs into a hillside, with real changes in elevation from the very first hole, before the back nine settles into flatter ground dotted with lakes, including a memorable island-green par 3 from the 11th onward. Well-placed hazards and undulation keep things interesting without tipping into unfair, and the course has built a reputation over two decades for consistently good conditioning. Look out for the bunker on the 18th, shaped like a horse's head in tribute to Jerez's famous equestrian tradition. Sherry Golf has hosted a genuine run of amateur and qualifying tournaments since opening, testament to a course built for serious golf as much as an enjoyable one.
